Five places per neighborhood. Five things decide them.

A great plate isn't enough on its own. We look at the whole visit — what's on the table, how you're looked after, how the room feels, whether it's worth the money and whether locals keep coming back.

Food quality comes first.

Is it the best version of what it's trying to be — the taco, the espresso, the martini? Editors order across the menu on their own bill, at least twice, on different days. No comps, no sponsored spots.

Service: do they take care of you?

From the door to the check: the welcome, the pacing, knowing the menu, fixing a mistake. Visits are unannounced, so we get the service you'd get. A counter spot can nail this as well as a tasting room.

Ambience: does the room make you want to stay?

Light, noise, music, comfort, the patio, the crowd — judged at the hour you'd actually go. Candlelit and quiet or loud and packed at the counter, both can earn it.

Value: is it worth what it costs?

Compared with the other places on the same list, and judged against its own price. A $4 taco and a tasting menu can both earn a spot — neither can if you'd leave feeling you overpaid.

Popularity: do locals keep going back?

Vouches, repeat visits and how full it is. Hype alone doesn't earn a spot, but a place its neighborhood keeps returning to does.

Editors weigh all five together and set the order — no scores out of ten. Five is a cap: if a sixth place earns in, one comes off. Every list gets re-walked, and a place drops when it slips on any of the five.

An editor visits. You go on a Tuesday, a Saturday, the week the chef changed. Locals are the first to notice when a kitchen slips or a new place gets good, so set your neighborhood as home and vouch for the spots you'd send a friend to. Those are the vouches we weigh most.
